— Cave Valaisanne restaurant (CAV)

The restaurant renovation project followed a fire that completely destroyed the dining areas on the ground floor and damaged all technical installations, while leaving the apartments on the upper floors untouched.

The challenge was to give the restaurant a new identity while complying with updated safety and technical standards, and respecting heritage constraints.

The new aesthetic is based on the use of solid oak—a noble wood that meets fire safety requirements and can be used for both flooring and wall cladding. The design of all built-in furniture seeks to create a unified atmosphere throughout the dining areas, further reinforced by the use of red for the curtains and chairs.

The shopfronts were redesigned identically to the originals, but now meet contemporary thermal performance standards.
